Proper Handling of Craft Cocktail Ice

So you’ve got the finest craft ice (ours!) and you’re ready to pour that drink.
Don’t ruin the experience by handling the ice incorrectly!

Our craft ice comes neatly packaged in sleeves or bags.  On occasion, the ice can freeze back together.  If this happens, place the ice on a clean surface, towel or bar mat.  Use a blunt object and place it between the seam where the ice re-froze.  Gently tap the palm of your hand on the object to separate the cubes.  This is not an issue with our spheres.

If you’re not storing your ice at 18 degrees Fahrenheit, you’ll need to take some steps to ensure the ice doesn’t crack.  If you introduce a warmer liquid to the very cold ice, you may cause it to pop.  This is called thermal shock.  The drastic difference in temperature between the ice and liquid will cause the ice to crack.  The chilling power of our awesome ice will not be affected…it just won’t look as good!

For home use

We recommend pulling out a cube or sphere of ice a few minutes prior to use. Allow the ice to temper in the glass before you pour your favorite libation or whiskey onto the ice.  The ice is ready when it starts to look a little wet.  If the ice is completely frosty, it is likely too cold.

For hospitality use

We recommend pulling out  enough ice to be served within a 30 to 60 minute period.  Ice can be placed into a refrigerated cooler behind the bar.  This will temper the ice AND slow the melting process.  When grabbing ice for service, it is strongly recommended that you use a vessel or container that is already chilled.  This will keep the ice from melting on your way back to the bar.  If you do not have a cooler to use, place the ice on a clean, sanitized surface and allow it to temper prior to serving.

Whether using our ice at home or in the hospitality industry, unused ice needs to be placed back into the freezer on a piece of plastic wrap or other non-stick surface. Ice that has been refrozen can be placed back into the original box or other bag for storage.
